The final list includes only 101 restaurants, selected from more than 900 establishments dedicated to meat evaluated in different parts of the world. The selection process is based on 28 specific criteria, which cover from the quality of the cuts and the maturation methods to the origin of the products, the accuracy in cooking, the level of customer service and the technical knowledge of the equipment.
