Sherry wines now have their definitive book

It is an essential on the best tables around the world, one of those wines that have conquered the most demanding diners. However, as surprising as it may seem, To date, Sherry wines did not have a book that would serve to capture their deep mark, especially in the great culinary revolution that has existed in our kitchens in the last two decades. Planeta Gastro and the Sherry and Manzanilla Wine Regulatory Council have just published one of those works intended to be a reference, titled in the manner of a declaration of principles: “Drink Eat Love Jerez.”

The volume, which was presented yesterday at the Share restaurant in Barcelona, has in its pages important signatures both in terms of gastronomy and oenology. In this way we can find texts of names such as Josep Roca, Ferran Adrià, Pedro Ballesteros, José Andrés, Quique Dacosta, Ricard Camarena, Sarah Jane Evans, Carmen Aumesquet or César Saldaña, president of the Denomination of Origin of Jerez, among much others. The book, dedicated to Juli Soler, who, together with Ferran Adrià, was the architect of El Bulli, reminds us that the wines of Marco de Jerez have their origin about three thousand years ago, when the Phoenicians settled in the Jerez region to found the first cities in Europe. In this regard, the first news about this drink dates back to the chronicles of Strabo, a Greek geographer from the 1st century BC, who stated that The vines from this part of the peninsula were brought to the region by the Phoenicians around 1,100 BC. Added to this is the fact that the archaeological sites of Phoenician origin at Doña Blanca Castle, located between Jerez and El Puerto de Santa María and where the oldest known winery in the West is located, confirm that they were the founders of the ancient Gades (Cádiz) who brought to us the laborious art of both cultivating vines and making wine from the very distant territory that we today call Lebanon.

Yesterday, during the book presentation, Chef Eduard , from Juli Soler’s experience in El Bulli. In this sense, remembering the legendary restaurant, Xatruch pointed out that “El Bulli marked our life, but Juli is a figure that is very important in our present and the proof is that the people who visit our restaurants place a lot of value on the room service, a philosophy that we started in Enjoy in 2012 and for two years we have continued in Share Barcelona.

He also specified that “there are many things that can be replicated, but Jerez is unique, because it has a true history behind it, which dates back to the 14th century, which for 800 years has maintained its presence and which today is present in the menus of the great restaurants from all over the world, from Japan to Brazil.

For his part, César Saldaña, president of the Regulatory Council, also spoke at the event in which he explained that more than 25 years ago, “the sector made the brave decision to make gastronomy the fundamental axis to communicate the quality of these wines.” to the world, hence the birth of Copa Jerez, the prestigious international competition for harmonies with Sherry Wines, which has been celebrating its 20th anniversary.
