The beef or chicken casserole, It is one of the classic dishes of the chilean cuisinewith the traditional dam of one of these two meatsaccompanied by vegetables, potatoes and other dressings.

But there is also the recipe nogada casserole, which as its name indicates contains nuts; ingredient that gives a different flavor to this national dish, which is popular originating from the Andes.

Nogada casserole recipe

Ingredients

  • 6 pieces of chicken
  • 1/4 cup rice
  • 8 potatoes
  • 1 1/2 liter of cold water
  • 1/2 paprika
  • 1/2 onion
  • 1 sprig of celery
  • Parsley
  • Oregano
  • Salt
  • Pepper
  • Oil
  • 1 cup ground walnuts

Step by Step

  1. The first thing is to clean the chicken pieces, in this step you can remove excess fat or skin if this is the case.
  2. What follows is in a large pot, put a little oil, when it is hot we seal all the chicken pieces, until they are golden brown on all sides.
  3. Wash very well and chop the onion, celery, parsley and paprika, reserve for later.
  4. In the same pot in which the chicken is, add the onion to sauté, when this happens, add the paprika, celery and just a little of the parsley, reserve the rest.
  5. To the above add salt, pepper and oregano. Now it is time to add the water, cover and let it boil, at that moment we lower the heat and let it cook for 15 more minutes.
  6. Now add the diced potatoes next to the rice, let it cook for 20 minutes over low heat.
  7. In a small cup, add a little of the broth from the casserole and use it to hydrate the nuts. When this happens, it should have the texture of a soft mixture.
  8. At that point, let it cook for a couple more minutes and lower the heat.
  9. And we are ready to serve this delicious walnut casserole in deep plates, add parsley to decorate with a fresh touch.
