  • 3 large eggs at room temperature
  • 300 ml vegetable oil
  • 1 tsp vanilla extract
  • 300 grams of flour of all use
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon powder
  • ½ tsp salt
  • 300 grams of carrot peeled and grated.

Preparation mode

  1. In a clean, dry container, place the eggs, oil and vanilla. Mix with the help of a balloon whisk until you obtain a homogeneous mixture.
  2. In another container, mix the dry ingredients, that is, the flour, baking powder, baking soda, salt and cinnamon. Then sift the mixture over the wet ingredients and mix until perfectly incorporated.
  3. Add the grated carrot and walnuts and stir until you have a perfectly integrated dough. Then pour into a greased or waxed paper-lined mold and take to the oven, previously preheated, at 180°C for 60 minutes on the medium level. Check the cooking with a toothpick, if it comes out clean, turn it off and let it cool for 10 minutes in the oven before removing it from the mold and letting it cool on a rack.
  4. To prepare the glaze, use a mixer to cream the butter. When you notice that its color has changed slightly, add the icing sugar little by little and stir with the mixer off. Once you notice that the icing sugar is no longer at risk of flying, turn the mixer back on and continue mixing. Then add the cream cheese and beat again until you get a homogeneous paste texture.
  5. Decorate the bread with this glaze when it has cooled and add pieces of walnuts around it. And ready!
