And in the case of whites, which are generally more acidic, lighter wines, also accompany dishes with a lower density, add salads or something lighter, chicken, fish, but you also have to take into account if it goes with a sauce, maybe it would go better with something else, although there are certain rules of pairing so to speak, it is always best to follow each person’s tastes because each person may or may not like certain combinations.”

Los Aromitos Winery: Jacob said that Los Aromitos integrates vineyards, winery and nature reserve. It is a 100% family project that he started with the vine plantations in Colonia Ensayo in 2010. “We were one of the first wine projects in the province. We joined this resurgence of the activity that had begun in 2000. Today we have three hectares of vines in Colegio Ensayo of different red varieties, malbec, merlot, syrah, tannat, marcellán, chardonnay in the case of white grapes and some other table grapes. Today our winery is located in the city of Crespo. One hundred percent of the wines we make are grown by us in our vineyard, with the grapes from our vineyard. Today our winery is one of the four that is enabled by the INV in the province of Entre Ríos. We make an average of 13,000 to 12,000 liters of fine, red, white and rosé wines per year. In addition, we have transformed the farm where the vineyard is located into a private nature reserve. It is a multiple-use reserve that has a productive objective in the case of the vineyard and an objective of preserving native flora and fauna in the case of the native forest, there are about six hectares of native forest in the same place where the farm is located. integrates the vineyard,” he highlighted.
