Rice salad with mango, mozzarella and orange vinaigrette: explosion of flavor

We will start by adding basmati rice (previously cooked), a diced mango to our salad plate, and we will do the same with the avocado. We cut a carrot into slices, then into strips and then into dice.

We also cut two mozarellas and add them to the salad with cherry tomatoes without skin and chopped pistachios and the vinaigrette.

The vinaigrette is made by mixing with a good splash of orange, salt, olive oil and pepper. We close the jar, mix to emulsify. And we put it together with fresh chives in the salad!
