Rice salad with mango, mozzarella and orange vinaigrette: explosion of flavor

What do you most want to eat in good weather? Light, fresh dishes, easy to prepare and without much cooking. And salads in all these categories are absolute protagonists.

Mango is a fruit with a high water content (80 grams per 100 grams of this fruit) and natural sugars, in addition to having great power. satiating. It has minerals, vitamins of group A and B, especially folic acid, and a minimum of vitamin C (44 mg), with carotenes and a very good contribution of fiber.

The avocado, for its part, we all know the enormous benefits it hides. It is rich in dietary fiber, heart-healthy fat and vitamin C (17 mg). It has antioxidant substances and micronutrients such as folic acid, iron, phosphorus, magnesium and potassium (400 mg).

This proposal from Chef Bosquet is going to become the dish that you make the most during the summer season. Time to time! This is how it is prepared:

We will start by adding basmati rice (previously cooked), a diced mango to our salad plate, and we will do the same with the avocado. We cut a carrot into slices, then into strips and then into dice.

We also cut two mozarellas and add them to the salad with cherry tomatoes without skin and chopped pistachios and the vinaigrette.

The vinaigrette is made by mixing with a good splash of orange, salt, olive oil and pepper. We close the jar, mix to emulsify. And we put it together with fresh chives in the salad!

This recipe can also be a good idea to cook with children, since they will enjoy the preparation and also eat healthy. That’s what her wife, Laura Álvarez (on Instagram @lapediatralaura), proposes in her book ‘Ready, set… Yum!’ in which in addition to giving healthy advice for children’s meals, she provides fun and delicious recipes designed by Chef Bosquet.
