What New Restaurants Have Entered The Michelin Guide?

The Michelin Guide can be perceived in the same way that someone who is not a soccer fan might perceive the Michelin Guide sees only big games. The star gala would be a final (Champions League or European Championship) and the restaurants that make up the list (announced monthly) could well be every league matchday.

The work of the Michelin Guide inspectors has been more than ever since the aforementioned gala was held, yes, but it does not remain so. And every month they add a restaurant to the list, which they advertise through their online magazine.

Regarding the month of June, without going any further, they emphasize: “We can’t think of anything better, now that the summer is starting, than discovering the new establishments that are immediately included in the selection, as they are a great opportunity to travel around the country.”

And in this summer selection, a restaurant in Madrid stands out: Pabu (Panama Street, 4), headed by Coco Montes: “the work philosophy has been built around seasonality in its maximum expression, that’s why here they always talk about “micro-season” and only work with the best products of the moment acquired that same day”

If in June the Honor of being awarded went to Pabú, in the previous months there were moments to recognize four other restaurants. In February, Tramo and Haramboure were included in the Michelin Guide.

In March it was the turn of Kabuki and in May it was the turn of Los 33, one of the most important trendy restaurants in Madrid, they said that they have “modern dishes that coexist with more traditional Uruguayan proposals, such as their select cuts of grilled meats”.
