The Copil Seal is awarded by Fundación Casa de México in Spain in collaboration with the Mexican Academy of Gastronomy (AMG) and a committee made up of Mexican restaurant professionals, and is the highest distinction awarded to restaurants for excellence in Mexican cuisine authentic Mexican cuisine in Spain.

Restaurants wishing to obtain it must fill out a form and wait for the anonymous visit of a committee of experts who will finally evaluate the awarding of the seal. In 2024, there are 78 restaurants recognized in Spain with this seal.
