  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 8 mushrooms
  • 30g. of nuts

  • 80 ml. of virgin olive oil

Step by step preparation

  1. We separate and clean our spinach.
  2. We wash the peppers and remove the seeds. We cut them into very thin strips.
  3. We remove the stems from the mushrooms, clean the heads and cut them into thin strips. We sprinkle them with lemon juice so that they do not oxidize.
  4. Peel the onion and cut it into julienne strips (first in half and then into thin slices).
  5. To prepare the vinaigrette, peel and crush the walnuts (you can use a mortar and pestle to crumble them perfectly or use a knife to cut up the larger pieces that are noticeable when eating) and mix them with the oil, vinegar and a pinch of salt.
  6. When we go to eat we place all the ingredients on a plate, first the spinach and then our entire colorful party of ingredients. We decorate with the chives and poppy seeds and drizzle with the vinaigrette.

Tips for a multicolored spinach salad

  • In order for the flavours of our recipe to blend perfectly, it is necessary that the strips of peppers and onion maintain the same thickness and size (as thin as possible).
  • It is best to wash mushrooms without soaking them so they do not absorb water or use a damp cloth.
  • Spinach is super healthy, a very important source of iron, but we should not abuse its consumption raw because it contains oxalic acid that can inhibit the absorption of other important nutrients, such as calcium.
