Broth to combat anemia
Ingredients
- 500 g of turnip greens (it is the turnip sprout).
- Legumes (whatever you like).
- Water.
- 500 gr of potato.
- 1 back bone.
- Meat trimmings (can be pork or beef).
- 2 sausages.
- Salt to taste.
- 50 g of pancetta or bacon.
Turnip greens are the main ingredient in this broth or soup, and this is because it helps improve the absorption of iron from legumes.
The first step to prepare this broth is to soak the legumes (the night before). In a large pot, place two liters of water and salt to taste.
Cook the legumes and meat until they are soft. Peel the potatoes, cut them and add them to the pot. Add the chorizos. When the potatoes are cooked, check if they need more salt or not, and that’s it.
