Olive Oil World Congress It is an event that brings together greater olive oil producers in the world. Based in Madrid, it is taking place between June 26 and 28 at the cI enter Yesorperior of Yoresearch cscientific (CSIC).
The objective of OOWC is to value the raw materials and the human work that is included in the production anddistributes of the oil, in addition to put the world of olive trees in contact with the same interests. They organize the congress International Olive Council (IOC), CIHEAM Zaragoza and the Foundation of the Mediterranean Diet.
During the three days, eight thematic blocks full of experts, scientists and academics, among others, will be addressed. The inauguration took place yesterday, Wednesday, June 26, by Jaime Lillo, executive director of the IOC.
During the opening day, the topic covered is the production of olive oil, covered in the presentations: ‘Olive oil against climate change’; ‘Genetics and crop production’; and ‘Challenges in manufacturing processes: digital transformation and valorization of by-products’.
On June 27th it will host presentations on ‘Product quality and safety’, ‘Sensory properties’, ‘Communication and marketing’. The day will conclude with a dinner at the Palace of Madrid for those attending the ooic.
Finally, on the 28th and last day, talks will be dedicated to oil in its participation in the kitchen thanks to ‘Trade and consumption’ and ‘Olive oil, health and gastronomy’. After that, the event will be concluded.
