The potato omelette is one of the most emblematic dishes of Spanish gastronomy, and its original recipe has been transmitted from generation to generation over the years.

According to culinary experts, the original potato omelette recipe consists of very simple ingredients that are easy to find in any kitchen. To prepare it, you need potatoes, onion, eggs, salt and oil.

The first step is to peel the potatoes and cut them into thin slices. Then they are fried in a pan with plenty of oil until they are tender but not golden. Meanwhile, cut the onion into julienne strips and sauté in another pan until transparent.

Once the potatoes are cooked, drain them and mix with the onion in a bowl. In another bowl, beat the eggs with salt to taste and add them to the potato and onion mixture.

The pan is heated again with a little oil and the potato, onion and egg mixture is poured. Cook over medium heat for a few minutes, until the tortilla is set on one side. Then, turn it over with the help of a plate and cook it on the other side.

The original potato omelet is served hot, cut into portions and accompanied by a salad.
