The chef Dabiz Muñoz announced a few months ago the radical change in his flagship, DiverXO. The chef was planning a move from his current headquarters, in the NH Eurobuilding hotel, to move his restaurant to the exclusive urbanization of La Finca, in Pozuelo de Alarcón. This radical change was planned for early 2025 and had a wide budget between 12 and 14 million euros.
However, it seems that Things have changed radically. This Friday, the three-time ‘Best Chef in the World’ announced a change of plans: “As you know, we had been working on the new DiverXO for a long time. with unlimited doses of enthusiasm and investing enormous amount of effort and resources”the chef began by writing in a publication on his Instagram account.
“Today I wanted to share with you that after carefully thinking about it I have decided not go ahead with the project that we had announced, a difficult but necessary decision,” he continued. “The new DiverXO has to be iconic, unique, groundbreaking, dreamlike, transgressive and without ties, creatively free and without limits, and “Only in this way can it exist”he claimed, requirements that, it seems, this new location did not allow them to meet.
“From today We are already working on new options to make my dream come true, and although I know it is a difficult dream, I am confident that we will achieve it. Now, more than ever, the best is yet to come, we have not yet shown our best version! “, the Madrid chef concluded his message.
With these words, the famous Madrid chef makes clear a Unexpected change of plans for Madrid’s only tri-star. In his statement, Muñoz does not mention LaFinca Group, although it implies that this break also means the separation with the company founded by the García Cereceda family, which was going to be its ‘partner’ and landlord in the luxury urbanization of Pozuelo de Alarcón. La Finca is a luxurious urbanization located in the municipality of Pozuelo de Alarcón, a place that has become the Favorite area of many celebrities to establish your residence, due to the great privacy and security that can be enjoyed there.
The plan was build a new DiverXO headquarters of 1,900 meters to serve about 40 covers per service, a completely renovated version of its best-known and award-winning restaurant. The chef’s objective was, according to what he said in his intervention in Madrid Fusión, “change DNA” of his restaurant, completely changing his proposal. “I have always said that I wanted it to be an amusement park for the client, but that is really a lie, it is an amusement park for me. I want people to find the same level of being unique but It seems like there is another cook behind. Let people think ‘I like it as much as the other guy, but this is not Dabiz Muñoz’.”
Now, a range of possibilities opens up regarding alternatives for the location of this new DiverXO, since, once the plan with La Finca has been abandoned, Dabiz Muñoz will have to decide what future he wants for his haute cuisine space. This luxury development would have been the fourth location of Dabiz Muñoz’s restaurant, which began its journey in 2007 in a small location in Francisco Medrano, after which it moved to Pensamiento Street. Since July 2014, Dabiz Muñoz’s three-star restaurant has been located on the ground floor of the NH Eurobuilding hotel, a location that the chef is looking to retire soon.
