Recipe for homemade gingerbread and dulce de leche cookies

Ingredients:

  • 200 g butter at room temperature
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup dulce de leche
  • 1 Teaspoon vanilla extract
  • 3 cups of flour
  • 1 teaspoon baking soda
  • 1 teaspoon ginger powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • a pinch of salt
  • Dulce de leche to fill

    Instructions:

    1. In a large bowl, beat the butter with the brown sugar until creamy and smooth.
    2. Add the egg, dulce de leche and vanilla essence.and beat until well integrated.
    3. In another bowl, sift together the flour, baking soda, ginger, cinnamon, cloves and salt. Mix the dry ingredients well.
    4. Add the dry ingredients to the butter mixture and stir until you obtain a homogeneous mass.
    5. Wrap the dough in transparent film and refrigerate for at least 30 minutes.
    6. Preheat the oven to 180°C.
    7. Stretch the dough with a rolling pin on a floured surface until it is about half a centimeter thick.
    8. Cut the cookies with a cookie cutter shaped like a heart, star or whatever you prefer.
    9. Place the cookies on a baking tray lined with parchment paper and bake for 10-12 minutes or until golden brown.
    10. Let the cookies cool completely before filling them.
    11. To fill the cookies, place a teaspoon of dulce de leche in the center of a cookie and cover with another cookie.
    12. Repeat the process with the rest of the cookies.
