The Municipality of San Salvador de Jujuy joined the event organized by the Hotel Altos de la Viña hotel and the specialized enterprise Celiaquina, within the framework of World Celiac Disease Day. Professionals from the Food Safety Directorate and the Comprehensive Health Directorate gave the presentations that took place in this first event, which consisted of four talks and a tasting of products suitable for celiacs.

Representing the Municipality of San Salvador de Jujuy, Verónica Sánchez Rojo, head of the Department of Food Education, dedicated her presentation to informing attendees about the issues that concern the Directorate of Food Safety, especially regarding regulations. applicable and the implementation of public policies, “we have the food handling course as a mandatory topic so that handlers know and become aware of celiac disease and the correct handling of food; “We are carrying out these campaigns in educational establishments, through healthy kiosks, so that food is incorporated for members of the educational community who have this pathology,” said Sánchez Rojo.

“I focused on the regulations, which is the mandatory labeling that gluten-free products must have; cross contamination, correct handling of food so that it is not contaminated, both in homes and in gastronomic enterprises; The gastronomic services are gradually being incorporated and including alternatives for celiacs in the menu,” the professional summarized.

He also referred to the innovative commercial proposal that it develops in the entrepreneurial ecosystem of our city, “Celiaquina is a proposal where we have more than 95 products suitable for celiacs so that celiacs can buy delicious, suitable and safe products. We sell empanadas, cakes, pasta, we cater events, with proposals such as breakfasts, snacks, surprise boxes, cakes and a wide variety of products.”

Finally, Patricia Calisaya, vice president of the College of Nutritionists of Jujuy, commented on what this condition is about, which has gained visibility in recent times, which is why the awareness that is raised through these sessions in a framework of work is important. jointly between the public and private sectors, “celiac disease is a chronic disease that is increasing, it can be diagnosed at any time in life; Lately there have been many cases in adults.
